Well, I set out to take it easier today, but still had a pretty active day. First thing in the morning, I got the craving for some Biscuits and Gravy, so I whipped some up for us. I do believe this is the very first time I've ever made both from scratch actually. Check it out..
The only thing I will do different next time, is 1.) add more butter to the biscuit recipe, and 2.) add seasoned salt to the gravy. A biscuit tip for you though.. get the butter as cold as you can before mixing it into the biscuit mix. You actually want to see chunks of butter in the dough before you go to bake them. I'd also not roll them as thin as I did. However, I did roll them out this way so we'd have more of them to go around. In the end, we had plenty to douse in gravy, and even more to spread butter and jelly on.
Here's what I accomplished yesterday. A shorter list list for sure than previous ones from this week, but it still kept me busy..
- Went on a morning walk with my bride after our carb laden breakfast
- Spent a few hours washing both of our cars and then hand waxing them
- Light pressure wash on the driveway
- Added water to the swimming pool and treated it
MORE COMFORT FOOD..
So I kept with the breakfast theme and decided to make pancakes for dinner. But not just any pancakes mind you.. Bacon Pancakes!
Needless to say, these were a huge hit with the family. I added some cinnamon and vanilla to the pancake batter, so it low key tasted cake-like. The maple bacon added some nice saltiness and maple flavor that worked perfect with the pancake.
So these two meals accomplished exactly what I wanted for lockdown meals. They were cheap, filling, and tasted great. Any comfort you can get during this crisis is key, and these meals definitely were comfort food for us.
I do notice that the type of food I am consuming as of late has way more carbs than I'm accustomed to eating, so I'm really going to have to kick up my exercise regimen. This shouldn't be a problem with the pool and several bikes for me to ride. My swims are on hiatus for another day as my sunburn finishes healing, but I do believe I'll set out for a bike ride tonight around the neighborhood.
